Our Story

Join us at Pedro’s Pizza Lounge

Inspired by Corporate Chef Jeff Anderson’s 28-year passion for pizza, specifically New York style; combined with the Foster Family’s newfound love of NY Street pizza, they have created “a slice of New York” in downtown Hudson, Wisconsin.

Pedro’s Pizza Lounge offers traditional New York style slices, whole pies, inspired starters, fresh salads & enticing desserts. The welcoming lounge atmosphere will continue to offer the exceptional craft cocktails guests have grown to know and love as well as new exciting libations to explore.

Our Culinary Team is thrilled to enter the quick serve market without sacrificing quality from their scratch-kitchen. Owner Pete Foster offers “We are thrilled to bring an approachable scratch-kitchen New York style pizza experience to add to our local family of restaurants.” Pedro’s Pizza lounge will offer dine-in, take-out, catering & private events.

Authentic New York Style Pizza 

Our focus: New York Style Pizza: this pizza, when sold by the slice, is baked as an 18” whole pie yielding a generous, New York-sized slice. Arguably, there are four components to traditional NY style pizza: dough, sauce, cheese, and heat.

The Dough

NY-style pizza dough traditionally contains potentially harmful additives like bromated and bleached flour, but our recipe uses unbleached, unbromated flour with diastatic malt powder for fermentation and flavor, resulting in a naturally aged, stretchy dough.

The Sauce

Sauce variations between pizza shops are common, but we use fresh, uncooked crushed tomatoes for a vibrant flavor, enhanced with salt and citric acid to accentuate the natural tomato taste.

The New York Style Pizza

Our focus is on New York Style Pizza, typically served as 18” whole pies or slices, emphasizing the traditional components of dough, sauce, cheese, and high-temperature baking.

The Heat

We bake our NY-style pizzas in a triple deck Baker’s Pride gas-fired oven at around 600℉, utilizing cordierite-lined decks for consistent heat, resulting in a crispy crust and fully cooked ingredients in just 10 minutes.

The Cheese

Our cheese comes from Burnett Dairy in Grantsburg, Wisconsin, featuring low moisture whole milk mozzarella that melts easily, browns beautifully, and offers a rich, creamy flavor for our pizzas.
